Champagne Brunch Cocktails
By Le Creuset
Ingredients:
For French Greyhound:
- 1 (750 mL) bottle sparkling rosé wine
- 1 cup grapefruit juice
- 1/2 cup raspberries
For Ginger Peach Sparkler
- 1 (750 mL) bottle Prosecco
- 2 fresh peaches, peeled and sliced
- 1 tsp. fresh grated ginger
- 2 tbsp. granulated sugar
- 2 tbsp. cold water
- 1/2 cup sliced strawberries
Equipment:
- Large stoneware carafe
- Champagne crown sealer
- Champagne flutes
- Small saucepan
- Blender
Directions:
For Cocktails:
Make peach puree: melt ginger, sugar, water, and peaches in a small saucepan until sugar is dissolved and peaches start to break down. Let cool slightly and blend thoroughly in a blender, then chill until cold.
For cocktails, add puree or juice to chilled stoneware carafe, then top with sparkling wine. Seal remaining wine with champagne sealer to preserve bubbles.
Garnish champagne glasses with a few berries and top with cocktail.
For Crown Sealer:
Open one (or more) bottles of sparkling wine the day before or a few hours before the event, pour off one glass. Seal with the crown sealer and chill.
Note how long it was opened and resealed. The champagne sealer will keep bubbles fresh for days.
