Caring for and Seasoning Cast Iron Skillets

With proper care, oil-seasoned cast iron pans can last a lifetime—or longer. When cleaning a cast iron skillet or pan, wash it with soap the first time only; after that, avoid harsh soap or scouring pads that will remove the seasoning, and never run any cast iron cookware (enameled or not) through the dishwasher. To remove stuck-on food from a seasoned cast iron pan, scrub with a sponge or plastic scraper. Still stuck? Fill the (preferably warm) pan with coarse kosher salt and scrub it with a folded dish towel, rinsing it with water and drying it completely before storing to avoid rusting.
