Turkey Meatballs with Fresh Tomato Sauce

Ingredients:

  • 1 pound ground turkey
  • Handful basil, chopped
  • 1 cup breadcrumbs
  • 1 clove garlic, minced
  • 1/2 onion, finely chopped
  • 1/2 cup Parmesan, grated
  • 2 tablespoons olive oil

For the sauce:

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 shallot, finely chopped
  • 1 can crushed tomatoes
  • 1 teaspoon sugar
  • 1 pinch red pepper flakes
  • Salt and pepper to taste
  • 6 basil leaves, roughly chopped, plus more for garnish
  • Freshly grated parmesan cheese

Equipment:

  • Le Creuset Toughened Nonstick sauté pan with lid
  • Knife and cutting board
  • Large mixing bowl
  • Silicone spatula
  • Plate or platter
  • Wooden spoon or bi-material sauté spoon
  • Tongs or slotted turner
  • Cheese grater
  • Tasting spoons
  • Serving plates and utensils

Directions:

In a large bowl, combine turkey, basil, breadcrumbs, garlic, onion and Parmesan. Mix until thoroughly combined, then form the mixture into balls 3 inches in diameter. Heat olive oil in the sauté pan over medium-high heat. Sear the meatballs until brown on all sides. Once browned, remove to a plate and reserve. To make sauce, heat olive oil in sauté pan over medium heat, then cook garlic and shallot while stirring until fragrant. About 1 minute. Then add tomatoes, sugar and red pepper, stir to combine and bring to a low simmer. Season with salt and pepper to taste

Add meatballs back to pan with sauce, cover with lid and cook over medium-low heat for 20 minutes or until meatballs are cooked through. Stir in chopped basil and taste again for seasoning. Serve meatballs on their own sprinkled with fresh parmesan, or over top of polenta or fresh pasta.
